The flat cooking area on the bottom is exactly 5.5 inches. The rising edges flare gently outwards at the bottom then get steeper so the top area is 9″.
3 eggs over easy? The small flat bottom area is PERFECT and the sides sloap gently from the bottom so you can flip them with a simple wrist toss or easily get under them with a spatchula.
Fits perfect on my small burner and not having the extra size of the regular Calphalon skillets makes this heated and ready to cook very quickly.
Single or cooking for two? You will use THIS most often. The higher sides mean less cleanup of your stove and added volume in case you want to sauce it up.
For me this is THE pan for eggs. I am eating them as I write this. A perfect circle of 3 over easy fried eggs that I did not have to ‘chase’ all over a large pan watching some too thin whites cook too fast while other whites were undone. Uniform egg white thickness is a thing of beauty. I am on the low carb diet so YES, eggs are a big deal for me and so is cooking them exactly how I want them.
